Delightfully delicious but impossible to bake at home? Master the art of making this famous pear tarte with almond cream created by the owner of Patisserie Bourdaloue in 19th century Paris. In this demonstration class, start with discovering how to make pate sablee, a classic short crust pastry dough that, once baked, becomes the base for any tart you can imagine. Continue with the almond cream, a delicious cooked cream. Finish with learning the technique of cutting pears to nicely decorate your creation. Enjoy the results.

Olga Fraimbault

Olga studied pastry in Paris after a Business Degree. She obtained a certificate in French Pastry specialties, Chocolate and Ice Cream. She had the opportunity to work with the pastry Chef of Chamber of Senators in Paris - 06 and Hediard, one of the finest catering and restaurant in Paris, Place de la Madeleine. She is teaching basics of Pastry recipes to students at the French International School in Bala Cynwyd. She wishes to extend her classes to the Public Schools.
