Don't be intimidated by the challenge of making pasta sauces from scratch. In this interactive online class, follow along with Kathy as she shows you step-by-step how to create 3 popular and delicious homemade pasta sauces – Carbonara, Alfredo and Rosa. Students (who choose to participate) will need the following items: Rosa Sauce: 2 cloves garlic, finely chopped 1 tablespoon olive oil 1 large can Cento tomato puree ½ can water 1 potato, peeled ¼ cup grated Romano cheese ¼ cup red wine (optional) 1 tablespoon sugar 1 whole bay leaf 1 tablespoon oregano 1 tablespoon basil 1 teaspoon each: parsley sage rosemary thyme 1 small can tomato paste 1/4 - 1/2 cup heavy cream Optional - 1 can artichoke hearts, 1/4 cup sundried tomatoes, 1/8 cup toasted pine nuts Carbonara Sauce: Salt and black pepper, to taste 1 pound pasta, such as spaghetti or rigatoni 1/4 cup extra virgin olive oil (enough to coat bottom of pan) 1/4 pound bacon, chopped and cooked crisp 1 teaspoon red pepper flakes 5 to 6 cloves garlic, chopped 1/2 cup dry white wine (optional) 3 large egg yolks Freshly grated Romano cheese Handful of finely chopped fresh flat-leaf parsley, for garnish Alfredo Sauce: 1/2 pound fettuccine pasta 3-4 Tbsp. unsalted butter 2/3 cup finely grated parmesan cheese Black pepper 1/2 cup cream Nutmeg (to taste) Recommended Pasta: Fettucine for Alfredo sauce, your choice for other sauces. Recommended "Tools" : 2 large pots (Dutch ovens) with lids large skillet garlic press tongs and/or pasta claw colander wooden spoons ladles whisk measuring cups/spoons
